The ClostAbat website is the property of ANSES and is entirely covered by French and international legislation on intellectual property. All rights are reserved, including those of reproduction, distribution and transmission. Any use of the information contained on the site, regardless of its form, and particularly texts, photographs and diagrams, is subject to ANSES's prior authorisation.

 

Establishment of links
Any public or private site – with the exception of sites disseminating information that is illegal or of a particularly polemic, pornographic, sectarian or xenophobic nature – may, without prior authorisation, establish a link to the home page or directly to the information distributed by the ClostAbat website. However, under no circumstances shall the pages of the ClostAbat website (https://clostabat.anses.fr) be embedded within the pages of another site. In other cases, and particularly:

Caractérisation des dangers Clostridium perfringens et Clostridioides difficile dans les filières bovines, porcines et volailles en abattoirs

Clostridium perfringens et Clostridioides difficile sont des bactéries pathogènes majeures impliquées dans les infections humaines. C. perfringens est de plus l’un des dangers bactériens identifiés dans les Guides de Bonnes Pratiques d'Hygiène (GBPH) et d'application des principes HACCP du maillon abattage-découpe des filières bovines, porcines et volailles. Les animaux étant porteurs sains de ces deux espèces dans leur tube digestif, les viandes animales sont des cibles privilégiées pour expliquer la survenue d’épisodes toxiques impliquant ces pathogènes. Sans que l'adéquation et la pertinence des mesures de maîtrises mises en place en abattoir et en découpe ne soient remises en cause, peu ou pas de données sont aujourd'hui disponibles en France sur l'importance de ces deux dangers au maillon abattoir et atelier de découpe.

 

Le projet ClostAbat réunit des partenaires académiques et des instituts techniques avec un large éventail de compétences en sciences des aliments et en clinique humaine afin de développer des connaissances et des outils d'aide à la décision pour permettre aux filières d’avoir une information objective sur l’importance de ces dangers en abattoirs/ateliers de découpe.
